Coooooookies. Hey, we’re sophisticated, well-traveled adults. We’re well aware that the world has unlimited varieties of treats to enjoy, some of which involve fancy ingredients and elaborate methods. But swanky and soulful aren’t the same thing. We’ll never be too good for a simple, old-fashioned, homebaked cookie. We’re talking ultimate comfort food here, and that kind of goodness can’t be one-upped.
We’re thinking that’s the reason October 1 is National Homemade Cookies Day. It’s getting cooler outside and the need to nest is starting to assert itself. Pull on your cozies, tie back your hair, and preheat the oven. Doesn’t life seem calmer and sweeter already? (Just nod your head; we know your mouth is full of cookies.)

MADDIE'S CHOCOLATE CHIP COOKIES
Ingredients:
1 cup salted butter, softened
⅔ cup dark brown sugar
⅔ cup white sugar
1 small packet vanilla pudding mix
1 teaspoon vanilla
2 eggs
2 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon table salt
1 cup semi-sweet chocolate chips
Instructions:
Mix first four ingredients together. Mix in vanilla and eggs. Mix in flour, soda, and salt. Mix in chocolate chips. Bake at 375 degrees for 7-9 minutes.
HADLEY'S HEDGEHOG COOKIES
Make a batch of Ina Garten’s Ultimate Ginger Cookies. Melt Ghirardelli Dark Chocolate Melting Wafers according to package directions. Dip each cookie into the melted chocolate until it is ¾ covered in chocolate on both sides; lay on parchment paper to cure.
This is an excellent gifting cookie. (When the whole batch is dipped and laying on the counter, it looks like an array of hedgehogs; hence the name.)
